Corn, Tomato, Avocado Salad

I just stumbled upon this combination. So simple, yet so delicious.

CORN, TOMATO & AVOCADO SALAD

INGREDIENTS

2 large or 4 cocktail tomatoes, diced

4 ears of corn, boiled and cooled

1 avocado, diced

1/2 red onion, diced

Juice of 1 lime

1/2 cup cilantro, chopped

Drizzle of agave or maple syrup

Salt, pepper to taste

METHOD

In a large bowl, add diced tomatoes.

Cut kernels off corn and add to the bowl.

Add diced avocado

Add lime, syrup, cilantro, salt and pepper

Mix well.

    • Oh yes, absolutely!! If you add black beans, you may wish to add a pinch of cumin as well, to enhance the “Tex Mex” aspect.
